Due to their 50% lower calorie content than sugar, these Over The Top Isomalt Crystals are ideal for hard candy production. 

It can be used as a low-calorie sugar substitute in baking, to make edible gems, blown sugar, pulled sugar, and other confections. Candy can be readily colored by adding gel color; if not, the crystal will crystallize clear.

Because of their strong resistance to humility, these isomalt crystals won't crystallize.
